In Japan, Kyoto produces the second largest amount of Sake, and its center is the Fushimi area. By the encouragement of the Fushimi Sake Brewers Association, Kyoto-city established the “Ordinance on Promotion of Dispersion of Kyoto Municipal Sake” for the first time in Japan, and came into force on January 15, 2013. It was enacted in order to recognize Japanese manufacturing, its traditional culture, and industry. Also, it strives to promote Sake for the next generation and towards the world. Now, more than 100 municipalities have established similar toasting ordinance.
